Shortbread

Ingredients

All purpose Flour/Maida - 11/2 cup
Unsalted butter - 1 stick
Sugar - 1/2 cup
Salt - 1/4 tsp
Egg - 1/2 beaten egg
Lemon Juice - 5 drops

Method

Keep the unsalted butter to the room temperature before add
beaten 1 egg and keep it aside

Take a mixing bowl, combine flour, sugar, salt and butter mix with finger. Now add the beaten egg(half portion) and drops of lemon again mix with the finger until it clumps, it may seem very dry. Make it into ball and flatten it, wrap it in plastic and refrigerate for 1 hour.


Preheat oven to 350°F.

After 1 hour take the dough from refrigerator and keep at room temperature for at least 10 - 15 minutes Looks like very hard but its ok, make it like ball and roll it for how thickness you want and now cut out the cookie shape with the cookie cutter. Place the cookie on the cookie sheet with at least 1/2 inch distance between the cookie shape.


Bake at 350°F for 8-12 minutes depending on the thickness of the cookie, if cookie is very thin then 6 minutes is enough, until the edges are slightly golden brown in color. Remove from oven, let it cool on a cool rack for 10 minutes.

Shortbread cookies are ready to eat.

Mushroom Soup

Ingredients

Chicken Broth - 3 cans
Mushroom - sliced white (1 small that blue pack)
Carrot - half cup
celery - opt
spring onion -3
corn starch - 1 sp
egg - 1
cilantro
pepper

Method

1. Cut the mushroom int
o small pieces, carrot into small dice shape and cut the spring onion
2. Saute the mushroom with olive oil for 3 mints
3. Boil some water and add mushrooms and carrots for 5 to 10 mints and drain them keep it aside
4. Take a soup pot add the chicken broth allow to boil now add the mushroom and carrot, celery and spring onion(little amount)
5. Allow to cook the items for 30 to 40 mints in medium heat
6. Take 1 spoon of corn starch and 3 sp of water and mix it
7. take 1 egg and beat well and keep it aside
8. Chopped the spring onion and cilantro
9. when the time to take the soup from stove that time u keep the flame n very high and add starch in little bit little bit and mix the soup you can see the thickness then add the beated egg immediately switch off the stove and take the soup pot out from the stove.
10. Now sprinkle the spring onion, cilantro and pepper, ready to serve

yummy mushroom soup ready to drink....

Note:

If you forgot to switch off or take the soup pot out from the stove after you add the egg it will be like normal small round size egg.
The exact look of egg is like thread in the soup.

Egg Masal

This egg recipe is best for variety rice. It is a different recipe and look like spicy boiled egg.

Ingredients

Egg - 3
Chilli Powder - 1/4 tsp
Pepper Powder - 1/4/ tsp
Turmeric Powder - 1/4 tsp
Mustard Seed and Urad dal
Salt as per taste

Method

First boil the egg and cut into slices
Take a small bowl and put all the powders and salt in the bowl, add 1 or 2 Tsp water to mix the powder Check the salt taste and keep aside.

Heat the oil in the pan. Add mustard seed once the seed splutter, now slow the heat level and add the mixed powder water and mix with the mustard seed after 1 minute put the sliced egg into the mixer very slowly, once put all the slices now turn the egg upside down wait for a minute again turn now its ready to serve. The mixure is coated in the egg very well now and very very yummy to eat with the variety rice or any  rice.

Capsicum Fry

This fry is easy to make. And it goes well with variety rice, curd rice and sambar rice.

Ingredients

Green Capsicum - 1
Ginger and Garlic paste - 1/2 tsp
Red Chilli powder - 1/4 tsp
Turmeric powder - 1/4 tsp
Sambar powder - 1/2 tsp
Ground nut powder - 1 tsp
Salt
Oil

Method

Cut the Capsicum into small thin slices
Grind the ground nut

Heat the oil in the pan. Add ginger and garlic paste stir for 1 minute now add the sliced capsicum and stir. Within 5 to 10 minutes it cooks now add red chilli, turmeric, sambar powder and salt stir it and leave to cook for another 10 minute. Now fry is over, time to add ground nut powder and stir. Serve hot with curd rice, sambar rice or any variety rice.

Note:

If you want more you can double the measurement

Potato Masal

This recipe is wonderful and very easy to make. It goes very well with Puri, Chapati and you can use this masal for masal Dosa. I just use the masal to roll the Chapati for my kid she loves to eat chapati with this.

Ingredients

Potato - 3
Big Onion - 1 or 1 1/2
Green Chilli - 2 or 3
Ginger - small piece
Chana dal -1 tsp
Curry leaf 
Mustard seed and Urad dal
Whole red chilli - 2
Oil
Turmeric Powder - 1/4 tsp
Salt to taste
Coriander leaves (optional)

Method

Boil the Potato, peel  the skin and mash it pieces
Cut the onion and green chilli in lengthy wise 
Chop the ginger in very small size

Heat the oil and add red chilli then mustard seed and urad dal when it splutters add chana dal, curry leaf and ginger. Add Onion and fry when the colour turns add green chilli. Add turmeric powder and salt and fry, then add 1 or 1 1/2 cup water. Once the water come to boil now add mashed piece potato and close the lid and allow to cook for 15 to 20 minutes. Now and then stir the masal. Time to check the salt and water consistency, the masal looks perfect consistency once cooks over and its like thick consistency. Decorate your masal with coriander leaves but its optional. Ready to serve with Puri, Chapati.

Potato Fry

This is one of the easiest potato fry recipe. It is very quick and easy to make as well as tasty too.Also it goes as a very good side dish for Sambar rice, curd rice and all variety rice like lemon rice etc., My kid likes a lot lot and she used to have during my cooking itself.


Ingredients

Potato - 3
Garlic - 1 or 2 as per your taste
Curry leaf
Whole Red Chilli - 2
Mustard seed and Urad dal
Oil (Your Cooking Oil)
Red chilli Powder - 1/2 tsp or according to your spice level
Turmeric Powder - 1/4 tsp
Salt to taste

Method

Cut the potato in small cube size.
Grate the garlic or chop in very small size

Heat the oil in the pan in medium heat. Add red chilli, mustard seed and urad dal allow it to crackle. Add garlic and curry leaf stir it then put the potato and salt little bit allow it to cook. After half cook now add red chilli and turmeric powder.  Now fry the potatoes until it gets crispy. It takes within 10 or 15 minutes to crisp. Now ready to eat with your rice.


Another Method

Crush the garlic, small onion and red chilli together. Add this when you saute first before add the potato. It gives nice flavor and taste.
